smoked steelie quesadillas

Great with chicken or shrimp too
Ingredients
10 oz smoked steelhead, flaked
5 oz mexican shredded cheese
cumin, chili powder, garlic powder to taste
cilantro or parsley to taste
1 small jalepeno for some kick (optional)
1 pack large soft tortilla shells
chopped scallions
sour cream and salsa for dipping
Instructions
In large bowl, add flaked steelhead or salmon, cheese, spices/herbs, chopped scallions, and jalepeno. Mix thoroughly. On stove top, turn heat on medium. Spray a large nonstick fry pan with cooking spray. Spoon mixture on half of tortilla, then fold other half on top forming a half moon. Place quesadillas in pan and brown on both sides. Make sure cheese is thoroughly melted inside. Serve with salsa and sour cream for dipping.
